On our Nový Důvr farm, we breed Jersey cows. They are purebred and even the longest bred species. Milk from the Jersey breed is much healthier than other comparable species and the dry matter content is higher, so we are able to produce up to 20% more cheese or curd from the same amount of milk from another breed of cow.
